Bitcoin or Ethereum is probably the best cryptocurrencies to start with as one can be sure of its relevance and acceptability, as well as safety at least compared to the smaller coins. They have a robust communities, high liquidity, and sufficient resource for the new investors to understand their nature and their operations.

You can jump right into stablecoins to learn more about cryptocurrency. Stablecoins are pegged to the dollar and it’s without a lot of risk as well.

For me, I think the best cryptocurrency for beginners would be Bitcoin and Ethereum. These are well established cryptocurrency projects unlike the meme coins.
